Sem štejemo težke kovine, nitrate, mikotoksine, ostanke pesticidov, ostanke veterinarskih zdravil, dioksine in druge kemične snovi, ki se tvorijo pri neprimerni predelavi hrane/živil, mikrobe, tujke, semena plevelov, ipd. Koncentracija dejavnikov tveganja v hrani/živilu mora biti tako nizka, kot jo je mogoče razumno doseči z uporabo postopkov dobrih kmetijskih in proizvodnih praks v vseh fazah živilske verige in v nobenem primeru ne sme preseči v analizi tveganja določene zgornje mejne vrednosti posameznih onesnaževal v različnih živilih oziroma v njihovem užitnem delu.
Included are heavy metals, nitrates, mycotoxins, pesticide residues, residues of veterinary drugs, dioxins and other chemicals produced in unsuitable food processing, microbes, foreign bodies, weed seeds etc. Levels of risk factors shall be kept as low as can reasonably be achieved by following good manufacturing or agricultural practice at all stages of a food production chain and shall, in risk analysis, in no case exceed the maximum limits for certain contaminants in different foodstuffs or in their edible parts respectively.
